- Describe dietary changes and foods to improve your overall diet.
- Assess your physical activity level and identify ways to improve and personalize physical activity for you.
- Summarize your personal eating habits and indicate how this project will impact your career.

3-day Food and Physical Activity Record
- See the example of the Food Record that follows. Try to choose three days that reflect your typical diet, including one weekend day (Saturday or Sunday) and two additional days (Monday through Friday). Record everything you eat and drink including alcoholic beverages. Indicate what day of the week each date is.
- It is important that you are detailed and accurate. Be specific about the amount of food you eat using common measurements such as cup(s), teaspoon(s), tablespoon(s), etc.
- Include added items such as butter, coffee cream, mustard, or salad dressing.
- Include any nutritional supplements.
- Indicate physical activity other than normal activities.
- You will be submitting the 3-day Records on D2L. My Fitness Pal has the option of uploading the reports to a Word document or PDF. Otherwise, you can scan them into Word if you have handwritten them, you can retype them on the Word document, or you can make your own chart within your Word document for submission.
Computerized Analysis
- Use myfitnesspal.com to enter all foods and beverages you’ve consumed for three (3) days. Save your work on the website and electronically as a Microsoft Word document. You will create a user/password and be able to go back to each day you enter by entering the date.
- You will submit your Nutrition and Fitness Analysis paper on D2L. Using Microsoft Word is most efficient to import the analysis right into your paper. There will be 10-15 pages of reports.
- Should you need help with math or writing, contact the Academic Success Center.
Written Section (should be around 3 pages in length)
Use your three Food and Physical Activity Records and your computerized nutrition analysis to complete the following items and questions. This is submitted on D2L in one document, so save every piece as one. Please number each section and answer the questions in order.
- Food Records and Reports (to be submitted with the project, in the same document) (30 points):
- Describe food and beverages completely. Fill in each column completely in legible handwriting. See note above about the 3-day Food Records.
- Include:
- Nutrient Reports for sodium, potassium, calcium, iron, vitamins C and D
- Meal Summary
- Comparison to myPlate graphic (10 points):
- Compare your three Food Records to myPlate food groups.
- Indicate how your daily food intake can be improved in EACH food group, if needed.
- For example, state that in the Dairy group, you need to improve on consuming 3 servings of high-calcium foods each day. Elaborate on what foods you would choose.
- Carbohydrates (20 points):
- How many grams of carbohydrates do you consume daily? How many calories is this? What percentage of total calories comes from carbohydrates in your diet?
- How many grams of dietary fiber do you consume daily? Which foods supply the most fiber? What foods would you add to your diet to increase fiber if necessary?
- How does your total carbohydrate and fiber intake compare to dietary recommendations?
- How many grams of added sugar do you consume per day and how does that compare with recommendations?
- Protein (20 points):
- How many grams of protein do you consume daily? How many calories of protein is this? What percentage of total calories comes from protein?
- How do your serving sizes and number of servings of protein compare to dietary recommendations?
- Does your protein mostly come from which animal or plant sources?
- What improvements could you make?
- Fat and Cholesterol (20 points):
- How many grams of total fat do you consume daily? How many calories of total fat is this? What percentage of total calories comes from fat in your diet?
- How many grams of saturated fat do you have in your diet? Milligrams of cholesterol?
- How does your intake of total fat, saturated fat and cholesterol compare to dietary recommendations?
- What foods contributed to your total fat, saturated fat and cholesterol intake? Which should you eat more or less of?
- Vitamins and Minerals (20 points):
- Which foods/beverages would you add to supply vitamins and minerals that you were lacking?
- Be sure to address your intakes of calcium, vitamin D, sodium, iron, vitamin C, and potassium and how they compare with recommendations.
- If you take a vitamin/mineral supplement, you should address it.
- Food Choices (10 points):
- Indicate what factors influence your food choices and eating habits. Do you eat differently on a weekday vs weekend?
- How do your activities and lifestyle affect your food choices?
- What influences from your family/upbringing are reflected in your diet?
- Address any insights you might have about your nutrition habits in relation to your food choices.
- Health Risks/Disease Prevention (10 points):
- What health risks do you have, perhaps from family history?
- How could your diet be improved to help prevent nutrition-related diseases?
- What other lifestyle changes would you recommend for disease prevention?
- Physical Activity Assessment (10 points)
- What physical activities did you complete in the three days?
- Discuss your choices of physical activity and whether you need to improve your fitness level.
The next two sections are worth 50 points combined! Don’t forget to do them and be sure to spend some quality time.
- Revised Menus (25 points):
Revaluate your three days of food intake, including serving sizes which address any inadequacies or problems in your current diet. These menus should reflect the issues you have identified in the proceeding sections. In addition, reevaluate your physical activity level and include areas for improvement.
Re-write and highlight the changes for each day, being very specific on the food and quantity — include:
- serving sizes for all foods and beverages
- meaningful improvements paying close attention to your food selections from food groups that you may have been missing
- formatting that looks like a menu for three days that has serving sizes like cups and ounces
- Summary (25 points):
In this summary of three to four fully developed paragraphs, describe what impact the process of doing the diet analysis paper had on:
- you,
- your family and friends perhaps, and
- how you will apply what you learned.
- Describe how this assignment may have an impact on your career.
Grading Criteria:
You will not be graded on the quality of your diet, but the quality of your answers. Each section of the report will be graded according to the following criteria:
- Writing across the curriculum standards.
- Each question should be answered completely with identifiable answers.
- Each discussion should be thorough and not a few words or phrases.
- Your analyses and conclusions should be based on the text, what you learned in the course, and dietary recommendations.
